How to Pick the Right Pizza Cheese for Your Business

Choosing the right pizza cheese is one of the most important decisions a pizzeria or fast-food kitchen makes. It affects melt, stretch, browning, flavour and — crucially — your food cost.

1. Melt and stretch

For that signature cheese pull, look for a shredded mozzarella-style cheese with good moisture balance. Too dry and it won't stretch; too wet and it pools oil.

2. Cost per pizza

Work out your cost per pizza, not just per kilo. A slightly pricier cheese that spreads further can be cheaper in practice.

3. Consistency
